Introduction: Welcome to my kitchen, where we embark on a culinary adventure through the rich flavors of Indian cuisine. Today, I'm thrilled to share with you my favorite recipe for Chicken Korma – a dish that embodies the perfect balance of spices, creaminess, and succulent chicken. Let's dive in and discover how to recreate this classic dish right in your own home!


Ingredients:

  • 500g boneless chicken, cut into bite-sized pieces
  • 2 onions, finely chopped
  • 2 tomatoes, pureed
  • 1/2 cup yogurt
  • 1/4 cup cashew nuts, soaked in water for 30 minutes
  • 2 tablespoons ginger-garlic paste
  • 1/2 cup fresh cream
  • 2 tablespoons ghee (clarified butter)
  • 1 cinnamon stick
  • 3-4 green cardamom pods
  • 3-4 cloves
  • 1 bay leaf
  • Salt to taste
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon ground coriander
  • 1/2 teaspoon garam masala
  • Chopped fresh coriander leaves for garnish

Instructions:

  1. In a blender, combine the soaked cashew nuts and yogurt. Blend until you get a smooth paste. Set aside.
  2. Heat the ghee in a large skillet over medium heat. Add the whole spices – cinnamon stick, cardamom pods, cloves, and bay leaf. Sauté for a minute until fragrant.
  3. Add the finely chopped onions to the skillet. Cook until the onions turn golden brown.
  4. Stir in the ginger-garlic paste and cook for another couple of minutes until the raw smell disappears.
  5. Add the pureed tomatoes to the skillet. Cook until the tomatoes are well cooked and the oil starts to separate from the mixture.
  6. Now, add the chicken pieces to the skillet. Cook until the chicken is no longer pink.
  7. Pour in the cashew-yogurt paste prepared earlier. Mix well to coat the chicken evenly.
  8. Season with salt, red chili powder, turmeric powder, and ground coriander. Stir to combine.
  9. Cover the skillet and let the chicken cook in the creamy sauce for about 10-15 minutes on low heat, or until the chicken is tender.
  10. Once the chicken is cooked through, add the fresh cream and garam masala. Mix well and simmer for another 2-3 minutes.
  11. Garnish with chopped fresh coriander leaves.
  12. Serve hot with steamed rice, naan, or roti.
