  • 2 celery stalks, diced
  • 1 small celeriac (celery root), peeled and diced
  • 2 large potatoes, peeled and diced
  • 2 bay leaves
  • 6 cups water or chicken broth
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Preparing the Base:

    • In a large pot, add the split peas, pork shoulder or ham hock, bay leaves, and water or chicken broth. Bring to a boil over medium-high heat.
    • Reduce the heat to low, cover, and simmer for about 1.5 hours, or until the peas and meat are tender. Skim off any foam that rises to the surface.
