Ingredients:

  • 2 lbs (900g) mutton pieces (preferably with bones)
  • 1/4 cup ghee or vegetable oil
  • 2 large onions, finely sliced
  • 2 tablespoons ginger-garlic paste
  • 4 cups water
  • 1/2 cup plain yogurt
  • 1 teaspoon salt (adjust to taste)
  • 1 teaspoon red chili powder
  • 1 teaspoon turmeric powder
  • 2 tablespoons wheat flour (atta)
  • Fresh cilantro and julienned ginger for garnish
  • Lemon wedges for serving

Nihari Spice Mix:

  • 2 tablespoons fennel seeds
  • 2 tablespoons cumin seeds
  • 1 tablespoon coriander seeds
  • 1 teaspoon black peppercorns
  • 1 teaspoon cloves
  • 2-3 bay leaves
  • 1 cinnamon stick
  • 4-5 green cardamom pods
  • 1 black cardamom pod
  • 1/4 teaspoon nutmeg powder
  • 1/4 teaspoon mace powder

Instructions:

  1. Preparing the Nihari Spice Mix:

    • Dry roast all the whole spices (fennel seeds, cumin seeds, coriander seeds, black peppercorns, cloves, bay leaves, cinnamon stick, green cardamom, black cardamom) in a pan until aromatic.
    • Let the spices cool, then grind them into a fine powder using a spice grinder. Mix in the nutmeg and mace powders. Set aside.
  2. Cooking the Mutton:

    • Heat ghee or vegetable oil in a large pot over medium heat.
    • Add the sliced onions and sauté until golden brown. Remove half of the fried onions and set aside for garnishing.
    • Add the ginger-garlic paste to the pot and sauté for 1-2 minutes until fragrant.
    • Add the mutton pieces and cook until they are browned on all sides.
    • Mix in the yogurt, salt, red chili powder, turmeric powder, and 2-3 tablespoons of the prepared Nihari spice mix. Cook for a few minutes, stirring well to coat the mutton with the spices.
  3. Slow Cooking:

    • Add 4 cups of water to the pot and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 2-3 hours, or until the mutton is tender and the flavors are well developed. Stir occasionally to prevent sticking.
    • In a small bowl, mix the wheat flour with a bit of water to make a smooth paste. Add this paste to the pot and stir well to thicken the gravy. Cook for another 10-15 minutes.
  4. Final Touches:

    • Check the seasoning and adjust salt if needed.
    • Garnish with the reserved fried onions, fresh cilantro, and julienned ginger.
  5. Serving the Mutton Nihari:

    • Serve hot with naan, paratha, or steamed rice.
    • Squeeze fresh lemon juice over the Nihari before serving for an added zing.
