Ingredients:

  • 1 lb (450g) ground mutton
  • 2 tablespoons ghee or vegetable oil
  • 2 medium onions, finely chopped
  • 2 tomatoes, finely chopped
  • 2 green chilies, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1 teaspoon ground cumin
  • Salt to taste
  • 1 cup green peas (optional)
  • Fresh cilantro, chopped, for garnish
  • Lemon wedges for serving

Instructions:

  1. Preparing the Ingredients:

    • Finely chop the onions, tomatoes, and green chilies.
    • Set aside all the spices and ginger-garlic paste for quick access during cooking.
  2. Cooking the Keema:

    • Heat ghee or vegetable oil in a large pan over medium heat.
    • Add the cumin seeds and let them splutter for a few seconds until fragrant.
    • Add the finely chopped onions and sauté until they turn golden brown.
    • Add the ginger-garlic paste and green chilies to the pan. Sauté for 1-2 minutes until the raw smell disappears.
    • Add the ground mutton to the pan and cook until it turns brown and is no longer pink. Break up any lumps with a spoon while cooking.
    • Add the chopped tomatoes, turmeric powder, red chili powder, ground coriander, ground cumin, and salt. Mix well and cook for 5-7 minutes until the tomatoes are soft and the spices are well incorporated.
  3. Simmering the Keema:

    • Reduce the heat to low, cover the pan, and let the keema simmer for about 20 minutes, stirring occasionally. This allows the flavors to meld together and the meat to become tender.
    • If using green peas, add them to the pan and cook for an additional 5 minutes.
  4. Final Touches:

    • Sprinkle garam masala over the cooked keema and mix well.
    • Garnish with freshly chopped cilantro.
  5. Serving the Mutton Keema:

    • Serve hot with naan, roti, or steamed rice.
    • Squeeze fresh lemon juice over the keema before serving for an added tang.
